gratin: potato and tomato


Hi there! Yes, I know, this potato-tomato gratin is not much of a culinary reinvention nor a super-duper cooking creation, but it is very delicious and made super fast though! And it contains ingredients you probably always store in your kitchen: potatoes, tomatoes, cheese.

You will need (serves 2):

500 g potatoes, cooked

250 g tomatoes

1 onion

250 g (vegan) cheese, e. g. gouda

250 ml veggie broth

garlic (as much as you like)

olive oil

salt, pepper and chili to taste

optional: garden cress or any other herb you like

And here is how to make this potato-tomato gratin:

Cut the cooked potatoes and tomatoes into slices. Put some olive oil in a casserole, so that the potatoes won’t stick. Add layers of potatoes and tomatoes on it. Peel and cut the onion into small pieces. Mix a marinate out of the broth, the onion, the garlic, salt, pepper and chili. Pour it over the veggies. Grate your cheese on top or use sliced cheese. Bake it for about 15 minutes in a preheated oven on medium temperature. It’s done when the cheese is melted and lightly crusty. For some fresh addition I spread garden cress on top, but you can use parsley, chives or cilantro as well. Enjoy!
