beetroot // summer energy drink

I always think of beetroot as some kind of winter vegetable. But when spring arrived this year and I felt very tired and really sluggish, I was thinking I might need some extra iron to increase my energy level. So I came up with the idea of this beetroot drink that–now that summer is here–also makes a good snack to go for hotter days, because with the cucumber and lemon it is very refreshing and with the beetroot and carrot also pretty satisfying. Not to mention all of the vitamins and the good effects a hydrous nutrition (cucumber) and eating carrots (beta carotene) will have on your skin.


BEETROOT DRINK

You will need: 

2 pieces of beetroot

1 carrot

1/4 cucumber

4 lettuce leaves

1 tbsp. olive oil

1/2 lemon

salt and pepper to taste

And here is how to make it in 5 minutes:

Wash your veggies carefully, peel the beetroot and carrot.

Cut every veggie in medium-sized slices and put them in your blender. Add the olive oil and the juice from the lemon. Then add some fresh water until all the veggies are covered. Mix everything.

In the end, add salt and pepper as much as you like.

Enjoy! :-)


PS: If you would like to have a juice out of these veggies, just pour this drink right through a sieve or just use a juicer if you have one.

PPS: Also, this weekend there is the 25th WGT happening in LEipzig. The previous years, right from the beginning, I was involved–first as a visitor, and since 2001 as a DJane as well.
